I almost can end my post right there…this recipe is so simple!

Soak some wooden skewers in water.

Take raw large prawns, I buy mine devined and shelled, and put in a bowl.

Grate some fresh lemon zest over the prawns–you really don't need too much. 

Drizzle a little olive oil in the bowl and gently toss the shrimp.  Let it sit while you wash & dry the basil.

Wrap the shrimp in a fresh basil leaf and then wrap a thin piece of prosciutto around the basil wrapped shrimp.  I like to start at the tail when I do this. 

Then slide the wrapped prawn onto the skewer.  

Place on broiler pan and you broil.  Turn over when the prawn turns pink.  It only takes a few minutes for each side, especially since the prosciutto is so thin.
