Crab Pot Chowder

What do I do IF I have any leftovers from a crab boil?  Make chowder, of course! Here's my recipe for tonight's chowder: Chop left over andoullie (or other sausage that you used in the boil) and saute in butter in a large pot.  I added some mushrooms that I had hanging around in my fridge along with one sweet onion (diced).  The onion was not from the boil – although I did salvage some onion and garlic....

Spicy Red Beans and Rice

We smoked a ham on our Big Green Egg to compliment the family's turkey this Thanksgiving which means we have the benefit of the ham bone and leftovers!  Typically I like to make a white bean soup but I decided to try something that would be extra pleasing to my hubby and perfect for watching football:  Red Beans and Rice. I used this recipe for Red Beans and Rice on Epicurious for a base.  Here are...

Cataplana Clams and Mussels with Chorizo

Another treat from The Spanish Table in Seattle was a cataplana–a big copper dome pan that locks shut to steam the contents.  I can't wait to try it out tonight…I've reviewed several recipes and this is what I've come up with. 8 oz of sliced hard chorizo (about 1/4 inch thick like coins) 1 1/4 inch slice of Serrano ham.  (I meant to buy a little more at Metropolitan Market, but…I didn't realize how...

Editor's Note:  I'm pleased to present another Guest Chef, Di Kawell.  Di is a long time friend and real estate agent at Windermere West Campus in Federal Way.   This was another case of hearing about her delish dinner on Facebook…so I asked her to share her recipe–voila!   4 decent sized servings Cook in large soup pot on stovetop...

Quick and Easy Meatball Soup

I've found this to be a great weeknight dish for when dinner time is sneaking up on me and I don't have time (or want to) go to the grocery store.   Don't tell anyone, but I actually use frozen Italian meatballs from Costco!  The kids like it and I'm able to make substitutions to the recipe when needed…and did I forget to mention it's pretty tasty? Here's how I made last night's version...

Crab and Corn Chowder

Last night, I was really wanting potato soup…and wound up making something even better: Crab and Corn  Chowder.  This is what I cooked up. In a large pot, saute 4 slices of bacon cut in 1 inch pieces until crispy.  Pour out all but 1 tablespoon of bacon grease.  Add 1 cup chopped onion and 2 stalks celery chopped and saute until soft.  Dice approx. 1 lb of baby potatoes and stir into pot.  Add butter if...

Tonights dinner: Posole

I’ve made this dish once before and it was a big success.  This will be my second attempt and, as usual, I have a few tweaks I’ll need to do to the basic recipe.  I need to be home for a wine delivery from our trip to Sonoma last July and I have a physical therapy appointment right when the UPS truck normally appears…so no time for the grocery store unless UPS shows up before I have to leave. I know this isn’t...
