What do I do IF I have any leftovers from a crab boil?  Make chowder, of course! Here's my recipe for tonight's chowder:

Chop left over andoullie (or other sausage that you used in the boil) and saute in butter in a large pot.  I added some mushrooms that I had hanging around in my fridge along with one sweet onion (diced).  The onion was not from the boil – although I did salvage some onion and garlic.  Saute until onion is soft.  

Meanwhile, cut corn off of cobs and then add to the pot.  Add potato from the boil. None of this takes very long as most of the food just needs to be reheated.   Add enough chicken broth to cover the vegetables.  Season with Old Bay and fresh cracked pepper.  Simmer for 10 minutes.

Speaking of crack… crack any remaining crab.

I add just enough half and half to give the soup a creamy appearance.  Simmer until reheated.

Add any left over seafood.  Tonight that included crab and shrimp.

Simmer for just a few minutes.  You don't want to over-cook your seafood.

Top with chopped green onions and parsley.
